Cherry Cheesecake Brownie

This cake combines all my favorite things. I barely managed to take some pictures because it’s usually gone in an instant.


  • 200 g dark chocolate
  • 200 g butter
  • 300 g caster sugar
  • 5 eggs
  • 100 g flour
  • 500 g cheesecake cheese
  • 200 g pitted cherries
  • 1 tsp vanilla extract


  1. All ingredients should be at room temperature. Melt chocolate over a pan of simmering water and let it cool. In the meantime beat together butter and 150 grams of sugar. Crack in 3 eggs, one at a time (add another only when the previous is well combined) until light and fluffy and pour in cooled chocolate. Add flour and beat well. Pour 2/3 into a tin lined with baking paper.
  2. Beat together the remaining sugar, cheese, vanilla, and eggs. It will be quite thin but just roll with it 😉 Pour it over the brownie. Using a teaspoon put dollops of brownie mix on top. Sprinkle with cherries. Bake in an oven preheated to 170°C for about 45 minutes (1 hour if you're impatient and plan to eat it right away), let it cool and put in the fridge to set before serving.
