Rita’s Brownies

A simple recipe for homemade brownies, with a story.


  • 1 stick unsalted butter
  • 2 squares unsweetened baking chocolate
  • 2 large eggs, at room temperature
  • 1 cup sugar
  • ½ cup unbleached all-purpose flour
  • 2 teaspoons instant coffee granules
  • 1 teaspoon vanilla
  • 1 teaspoon orange zest
  • 1 pinch kosher salt


  1. Preheat oven to 350 degrees.
  2. Use the wrapper from the stick of butter to grease a 9-inch square baking pan.
  3. In a medium-sized saucepan, melt the butter and chocolate over medium heat, stirring as it melts. Once melted, pull the pot off the heat.
  4. In a medium-sized bowl, beat the eggs, add the sugar and mix well. Pour into the chocolate mixture. Add the flour, coffee, vanilla, orange zest and salt. Mix well and pour into greased baking pan.
  5. Bake about 25 minutes, remembering Rita's admonishment.
