Rita’s Carrot Cake Recipe

Ingredients:

  • 3 cups flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 2 cups grated carrots
  • 1 cup crushed pineapple
  • 3 x-lg. eggs
  • 2 teaspoons vanilla
  • 1 1/2 cup crisco oil
  • 1/2 cup chopped walnuts

Instructions:

  1. Preheat oven at 350 degrees.
  2. Sift flour baking soda, cinnamon and salt. In mixing bowl beat eggs then add sugar gradually. Add oil, then carrots, and undrained pineapple alternately with dry ingredients. Add vanilla and walnuts. Put in greased and floured pan and bake. ICING: 1 80Z CREAM CHEESE. 1/4 CUP OLEO, 1 TSP. VANILLA,1 1LB. BOX OF POWDERED SUGAR. BEAT WELL AND FROST COOLED CAKE.
